|1/3 cup||(80 mL) Bread crumbs|
|1/3 cup||(80 mL) Chicken stock|
|1/2 tsp||(2 mL) Dried basil|
|1/2 tsp||(2 mL) Dried oregano|
|1/2 tsp||(2 mL) Salt|
|1/2 tsp||(2 mL) Pepper|
|2 cups||(500 mL) Spinach, blanched and chopped|
PREHEAT oven to 375°F (190°C).
HEAT oil in a large skillet over medium-high. Add onion and peppers. Sauté for 2-3 minutes or until tender crisp. Set aside and let cool. In a large mixing bowl, blend ground turkey, onion and pepper, egg white, breadcrumbs, stock, dried herbs, salt and pepper.
PLACE 1/3 of the turkey mixture in the bottom of 8x4” (1.5 L) loaf pan. Top with chopped spinach, another third of the turkey, tomato slices and the remaining turkey mixture.
BAKE for 35-40 minutes or until the internal temperature reaches 185°F (85°C). Slice and serve hot.
