Classic Mexican ingredients in a classic Mexican dish makes for an awesome weeknight dinner!
|2 cups||(500 mL) Schneiders® Olde Fashioned® Fat Free Smoked Ham|
|1 cup||(250 mL) Canned black beans, rinsed and drained|
|1/2 cup||(125 mL) Canned sweet corn, rinsed and drained|
|1||Diced red pepper|
|1 cup||(250 mL) Salsa, divided|
|3||Green onions, thinly sliced|
|1 cup||(250 mL) Grated skim milk cheese|
|1 cup||(250 mL) Shredded lettuce|
|1/2 cup||(125 mL) Fat free sour cream|
PREHEAT oven to 400°F (200°C).
ARRANGE tostadas on a baking sheet. Mix together ham, black beans, corn, and ½ cup (125 mL) salsa. Divide the mixture between the tostadas and top each with diced pepper, green onions and cheese. Bake in preheated oven for 10 minutes or until heated through and the cheese has melted. Serve topped with shredded lettuce, diced tomatoes, the remaining salsa and a dollop of sour cream.
