Hamburger with Blue Cheese, Caramelized Onions and Mushrooms

Bold Blue cheese on a beef patty smothered in sweet onions and mushrooms and served on a classic Dempster’s® Original Burger Bun. Grab the napkins!

Ingredients

CARAMELIZED ONIONS:
2 tbsp (30 mL) Butter
2 tbsp (30 mL) Olive oil
2 Onions, sliced
Salt and pepper
SAUTÉED MUSHROOMS:
2 tbsp (30 mL) Butter
1 tbsp (15 mL) Olive oil
2 tsp (10 mL) Balsamic vinegar
1 Clove garlic, minced
1 (8 oz/225 g) Package mushrooms, sliced
HAMBURGERS:
1.5 lbs (750 g) Ground Beef
1 Egg, beaten
1 Clove garlic, minced
2 tbsp (30 mL) Chopped fresh parsley
Salt and pepper to taste
4 Slices Blue cheese
4 Dempster’s® Original Hamburger Buns
1 tbsp (15 mL) Melted butter
4 Leaves lettuce

Directions

CARAMELIZED ONIONS:
MELT butter with olive oil in a thick bottomed pan. Add sliced onions, salt and pepper and stir to coat. Cook over medium-low heat for about 20-25 minutes. Stir frequently scraping the bottom of the pan. Onions should be a deep rich brown colour. Set aside.

SAUTÉED MUSHROOMS:
MELT butter in a skillet over medium heat. Stir in balsamic vinegar, garlic and mushrooms. Sauté 15 minutes or until tender. Set aside.

HAMBURGERS:
MIX together beef, egg, garlic, parsley, salt and pepper in a large bowl. Divide meat into 4 balls and shape into patties. Refrigerate until ready to cook.

PREHEAT BBQ to medium-high. Coat grill lightly with non-stick cooking spray. Grill hamburgers 5 to 7 minutes per side or until internal temperature reaches 165°F (74°C).

BRUSH buns with melted butter and toast on the grill until golden. Assemble burgers with lettuce leaves, patties, blue cheese, mushrooms and caramelized onions.
