Super healthy and so delicious! Full of smoky ham flavour, creamy white kidney beans and the freshness of thyme and kale.
|1 tbsp||(15 mL) Olive oil|
|2||Cloves garlic, minced|
|2 cups||(500 mL) Diced Schneiders Olde Fashioned® 25% Less Sodium Smoked Ham|
|1||(19 oz/540 mL) Can white kidney or cannellini beans|
|1||(14 oz/398 mL) Can cherry tomatoes with juice|
|1 cup||(250 mL) Reduce sodium chicken broth|
|4 cups||(1 L) Chopped kale|
|1/4 cup||(60 mL) Grated Parmesan|
|Salt and pepper|
HEAT oil in a large saucepan over medium heat. Add onion, garlic and ham. Cook for 2-3 minutes. Stir in white kidney beans, tomatoes and chicken broth. Add sprigs of thyme and bring to a boil. Reduce heat and simmer for 7-8 minutes. Stir in kale; season to taste with salt and pepper. Serve sprinkled with grated Parmesan cheese.
Serve with crusty bread.
