Super healthy and so delicious! Full of smoky ham flavour, creamy white kidney beans and the freshness of thyme and kale.


1 tbsp (15 mL) Olive oil
1 Onion, chopped
2 Cloves garlic, minced
2 cups (500 mL) Diced Schneiders Olde Fashioned® 25% Less Sodium Smoked Ham
1 (19 oz/540 mL) Can white kidney or cannellini beans
1 (14 oz/398 mL) Can cherry tomatoes with juice
1 cup (250 mL) Reduce sodium chicken broth
2 Sprigs thyme
4 cups (1 L) Chopped kale
1/4 cup (60 mL) Grated Parmesan
Salt and pepper


HEAT oil in a large saucepan over medium heat. Add onion, garlic and ham. Cook for 2-3 minutes. Stir in white kidney beans, tomatoes and chicken broth. Add sprigs of thyme and bring to a boil. Reduce heat and simmer for 7-8 minutes. Stir in kale; season to taste with salt and pepper. Serve sprinkled with grated Parmesan cheese.


Serve with crusty bread.
