Creamy ham salad served in a scooped out avocado bowl!

Ingredients

1 Schneiders Olde Fashioned® Smoked Ham Steak, diced
1 Red apple, cored and diced
1 Stalk celery, finely diced
3 tbsp (45 mL) Chopped toasted almonds
4 Avocados
2 tbsp (30 mL) Lemon juice
DRESSING:
1/2 cup (125 mL) Mayonnaise
2 tbsp (30 mL) Grainy mustard
2 tbsp (30 mL) Apple cider vinegar
Salt and pepper

Directions

WHISK together all of the ingredients for the dressing and set aside.

COMBINE ham, apple, celery and almonds in a medium bowl. Halve each avocado and remove the pit. Scoop out most of the flesh from each and brush inside with lemon juice. Add the avocado and the ham mixture to the dressing and toss to combine. Season with salt and pepper.

FILL each avocado with a heaping spoonful of the ham salad, drizzle with the remaining lemon juice and serve chilled.
