Who could resist an omelette that is made with sweet ham and veggies for brunch?


1/4 cup ham, cut into squares
2 eggs
4 tbsp onion, diced
4 orange cherry tomatoes, halved
4 tbsp yellow bell pepper, diced
1 tsp butter
black pepper


Wash, cut and prepare all of the ingredients ready. Whisk eggs and black pepper in a bowl to combine. Stir in ham, onions, tomatoes and bell pepper to mix.

In a non stick frying pan, heat the butter on medium high and slowly pour in the egg omelette mixture. Cook for 3 minutes until the bottom has browned and the top is curdling. Using a spatula, carefully fold in half and cook for a minute. Turn over and cook for another minute or so until the egg is cooked through. Serve piping hot.
