Fresh cut home fries are always a favourite. Adding the leftover ham raises them to brunch worthy fare.
|4||potatoes sliced thin|
|4 tbsp||olive or vegetable oil|
|1 cup||left over ham-diced|
On medium high in a skillet cook potato slices in oil for about 5 min, turning as needed. Add onions and continue to cook and turn to brown potatoes and onions. Add ham and combine thoroughly. Cook for another minute or 2 to heat ham.
A sprinkle of parmesan or grated cheddar on the top dresses it up nicely as well.
