|4 tsp||(20 mL) Vegetable oil, divided|
|2 cups||(500 mL) Diced Maple Leaf® Country Kitchen® Smoked Ham|
|3||Cloves garlic, minced|
|3 cups||(750 mL) Cooked rice or Ready Prepared Express Rice|
|2 cups||(500 mL) Frozen vegetables of your choice|
|2||Eggs, lightly beaten|
|1 tsp||(5 mL) Sugar|
|2 tbsp||(30 mL) Soy sauce|
|1 tbsp||(15 mL) Fish sauce (optional)|
|Salt and pepper|
HEAT 2 tsp (10 mL) of oil in a large skillet or wok over medium-high. Add ham, onions and garlic. Stir-fry for 2-3 minutes. Add rice and vegetables. Continue to stir-fry for 3-5 minutes more.
HEAT remaining 2 tsp (10 mL) of oil in a small non-stick skillet. Scramble the eggs until set. Add to the rice mixture along with sugar, soy sauce, and fish sauce if using. Season to taste with salt and pepper.
Add hot sauce for a spicy kick.
