Spicy nachos with ham and fresh sweet salsa. Perfect for an appetizer or a quick snack.


1 Large bag tortilla chips
2-3 cups (500 – 750 mL) Grated Cheddar cheese
1 Jalapeno pepper, thinly sliced
1/2 cup (125 mL) Sliced black olives
1 (175 g) Package Schneiders Olde Fashioned® Smoked Ham Steak, finely diced
1 cup (250 mL) Pineapple, fresh or canned, finely diced
2 Large tomatoes, seeded and diced
1/4 cup (60 mL) Red onion
3 tbsp (45 mL) Chopped fresh cilantro
1 Small orange, zested and juiced
2 tsp (10 mL) Lime juice
Salt and pepper
1 cup (250 mL) Shredded lettuce


PREHEAT oven to 375°F (190°C).

ARRANGE half the tortillas on a large parchment paper lined baking sheet or pizza pan. Scatter half the cheese, half the jalapeno, olives, and ham over top. Add another layer of tortillas and the remaining cheese, jalapeno, olives and ham. Bake for 10-12 minutes or until the cheese is melted and bubbly.

MEANWHILE combine pineapple, tomato, red onion, cilantro, orange juice and zest and lime juice to make a salsa. Season to taste with salt and pepper.

REMOVE nachos from the oven and scatter with shredded lettuce. Serve with fresh salsa on the side.
