Simple Ham and Hash is simple and quick to make that is light and refreshing to eat for any brunch meal or as a side.


1/2 cup Maple Leaf Country Kitchen ham, diced
2 cups frozen hash brown potatoes
1/2 cup yellow bell pepper, diced
1/2 cup onion, diced
1/4 tsp herbes de Provence
1/4 tsp black pepper
1 tbsp oil


Dice vegetables and ham. In a skillet, add oil and heat on medium high. Add in frozen hash brown potatoes and stir to cook for about 5 - 7 minutes until softened and heated through. Toss in the ham, onions, peppers and herbs. Cook for about 4 minutes, tossing with a spatula to ensure even cooking. Serve as a main with HP sauce or as a side dish.
