Simple Ham and Hash is simple and quick to make that is light and refreshing to eat for any brunch meal or as a side.
|1/2 cup||Maple Leaf Country Kitchen ham, diced|
|2 cups||frozen hash brown potatoes|
|1/2 cup||yellow bell pepper, diced|
|1/2 cup||onion, diced|
|1/4 tsp||herbes de Provence|
|1/4 tsp||black pepper|
Dice vegetables and ham. In a skillet, add oil and heat on medium high. Add in frozen hash brown potatoes and stir to cook for about 5 - 7 minutes until softened and heated through. Toss in the ham, onions, peppers and herbs. Cook for about 4 minutes, tossing with a spatula to ensure even cooking. Serve as a main with HP sauce or as a side dish.
