|1/2 cup||(125 mL) Mayonnaise|
|1/4 cup||(60 mL) Water|
|1 tbsp||(15 mL) Lemon juice|
|3||Dempster’s® English Muffins, split in half|
|1||Package Maple Leaf® Natural Selections® Uncured Baked Ham|
COMBINE mayonnaise, water and one lightly beaten egg in the top of a double boiler or a heavy bottomed saucepan. Cook over low heat, stirring constantly until slightly thickened. Remove from heat and stir in lemon juice. Set aside.
POACH six eggs. Toast English muffins under a broiler until lightly toasted.
ASSEMBLE by placing a slice of ham, then poached egg on each half of an English muffin, top with a generous amount of sauce and a sprinkle of paprika. Serve immediately.
