This dish a the perfect treat to serve to start of the day right or a protein-packed afternoon snack!


1/3 cup (80 mL) Schneiders® Country Naturals® Smoked Ham, chopped
4 Eggs
1/4 cup (60 mL) Grated Swiss cheese
1 tsp (5 mL) Tarragon leaves
Salt and pepper


PREHEAT oven to 375°F (190°C). Lightly grease four- (6 oz/175 mL) ramekins or large muffin tins.

DIVIDE the ham equally between the dishes. Crack one egg into each cup. Sprinkle with 1 tbsp (15 mL) of grated cheese and ¼ tsp (1 mL) of chopped tarragon leaves.

BAKE for 15 minutes or until the whites of the eggs are just set. Serve with toasted bread or crusty rolls.
