Using your ham leftovers, whip up this easy dinner in 15 minutes for a tasty Ham and Edamame Bean Fried Rice.
|4 cups||cooked day old rice (white or brown)|
|1 1/2 cups||Maple Leaf® Country Kitchen® Smoked Ham, diced|
|2 tsp||sesame oil|
|2 tsp||coconut oil|
|1/2 cup||frozen edamame beans (or peas), shelled|
|1 cup||broccoli slaw|
|1||clove of garlic, minced|
|1 tsp||fresh ginger, minced|
|2 tbsp||low sodium soy sauce|
|2 tbsp||teriyaki sauce|
1) In a wok or large skillet, heat the sesame and coconut oil together over medium heat.
Add onion, garlic, peas or edamame, ginger and broccoli slaw. Stir fry until tender (about 5 minutes)
2) Crack eggs into pan and scramble, mixing throughout the vegetables until the egg is cooked. Add rice and ham, stirring, until heated through, about 1 minute.
3) Remove from heat and gently stir in the soy sauce and teriyaki sauce. Serve and Enjoy!
