Ham and Edamame Bean Fried Rice

Using your ham leftovers, whip up this easy dinner in 15 minutes for a tasty Ham and Edamame Bean Fried Rice.

Ingredients

4 cups cooked day old rice (white or brown)
1 1/2 cups Maple Leaf® Country Kitchen® Smoked Ham, diced
2 tsp sesame oil
2 tsp coconut oil
1/2 cup frozen edamame beans (or peas), shelled
1 cup broccoli slaw
1 clove of garlic, minced
1 tsp fresh ginger, minced
2 eggs
2 tbsp low sodium soy sauce
2 tbsp teriyaki sauce

Directions

1) In a wok or large skillet, heat the sesame and coconut oil together over medium heat.
Add onion, garlic, peas or edamame, ginger and broccoli slaw. Stir fry until tender (about 5 minutes)
2) Crack eggs into pan and scramble, mixing throughout the vegetables until the egg is cooked. Add rice and ham, stirring, until heated through, about 1 minute.
3) Remove from heat and gently stir in the soy sauce and teriyaki sauce. Serve and Enjoy!
