These light and fresh tasting Cucumber Cups make a perfect Appetizer for any social gathering.
|1||(5.5 oz/ 156 g) Can Maple Leaf® Flakes of Ham|
|1||(250 g) Container Cream cheese spread|
|3 tbsp||(45 mL) Thousand Island dressing|
|.25 cup||(60 mL) Grated Parmesan cheese|
|1 cup||(250 mL) Grated Cheddar cheese|
|2 tbsp||(30 mL) Chopped fresh dill|
|2 tbsp||(30 mL) Red pepper, finely diced|
|Sprig of fresh dill|
MIX ham, cream cheese, salad dressing, parmesan cheese, cheddar cheese and dill together. Set aside.
PEEL stripes from the outside of the cucumbers using a vegetable peeler. Cut off the ends and slice cucumber in 2” (5 cm) rounds. Using a melon baller or teaspoon measuring spoon, scoop the centre of each round leaving the bottom intact.
FILL each cucumber cup with the prepared filling using a piping bag or a small spoon. Garnish each with 1-2 pieces of red pepper and a sprig of dill. Serve immediately or store in a paper towel lined container to absorb the moisture from the cucumber cups until ready to serve.
