About this Recipe

These light and fresh tasting Cucumber Cups make a perfect Appetizer for any social gathering.

2 English cucumbers
1 (5.5 oz/ 156 g) Can Maple Leaf® Flakes of Ham
1 (250 g) Container Cream cheese spread
3 tbsp (45 mL) Thousand Island dressing
.25 cup (60 mL) Grated Parmesan cheese
1 cup (250 mL) Grated Cheddar cheese
2 tbsp (30 mL) Chopped fresh dill
2 tbsp (30 mL) Red pepper, finely diced
Sprig of fresh dill

MIX ham, cream cheese, salad dressing, parmesan cheese, cheddar cheese and dill together. Set aside.

PEEL stripes from the outside of the cucumbers using a vegetable peeler. Cut off the ends and slice cucumber in 2” (5 cm) rounds. Using a melon baller or teaspoon measuring spoon, scoop the centre of each round leaving the bottom intact.

FILL each cucumber cup with the prepared filling using a piping bag or a small spoon. Garnish each with 1-2 pieces of red pepper and a sprig of dill. Serve immediately or store in a paper towel lined container to absorb the moisture from the cucumber cups until ready to serve.
