Start your day off right with a filling Ham and Cheese Breakfast Wrap
|.5 tsp||(2 mL) chili powder|
|salt and pepper, to taste|
|1 tbsp||(15 mL) vegetable oil|
|2 tbsp||(30 mL) finely diced red pepper|
|2 tbsp||(30 mL) finely diced green pepper|
|1 tbsp||(15 mL) finely chopped red onion|
|1 tsp||(5 mL) chopped chives|
|1||(142 g) can Maple Leaf® Cooked Ham Chunks (drained)|
|2 tbsp||(30 mL) grated old cheddar cheese|
WHISK together eggs, chili powder, salt and pepper in a bowl.Set aside.
HEAT oil in a non-stick skillet, over medium heat and add peppers and onion.
Cook for 1-2 minutes while stirring with a rubber spatula.
ADD ham and continue to cook for 1 minute. Add egg mixture and continue cooking until eggs have set, about 2 minutes. Add cheese
and allow to melt.
WARM tortillas in the microwave on HIGH for 10 seconds. Remove and spoon half of cooked egg mixture onto center of each.
FOLD bottom of tortilla first about 1/3 of the way up then fold over left then right sides of tortilla to form a fajita. Repeat with second
tortilla. Serve immediately.
