Great quick and nutritious dinner for those nights on the go!
|1/2||green pepper, chopped|
|1 cup||shredded cheddar cheese|
|1/2 cup||chopped tomato|
|3/4 cup||chopped ham|
In 10-inch nonstick skillet, melt butter over medium heat. Add in ham and pepper, heat through for a minute, then stir in eggs, cheese, tomato, and ground pepper. Reduce heat to medium-low; as eggs set around edge of skillet, with spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set, about 8 to 10 minutes.
Cover, remove from heat and let stand 3 to 4 minutes or until cheese is melted.
Loosen around edge of frittata. Cut into wedges and serve.
You can even have this for breakfast the next day...if you have any leftovers. :)
