I can honestly say I have a weakness for bread, more specifically; homemade, hot from the oven, bread and these Ham & Cheese Breakfast Buns are no different. The meat and cheese combination is interchangeable and I’ve made such variations as bacon and blue cheese as well as pepperoni and mozzarella. These also freeze and reheat extremely well.

Ingredients

125 ml warm water 105 - 115 degrees
1 tsp sugar
4.5 cup instant quick-rise yeast or 2 envelopes
1.5 cups evaporated milk, heated 105 - 115 degrees
1/4 cup oil - canola or vegetable
2 tsp kosher salt
5 cups bread flour
1 cup sharp cheddar cheese, grated
1 cup any kind cheese, cubed small
1 cup cooked ham, cubed small
1 egg, beaten
1/2 cup sharp cheddar cheese, grated

Directions

Instructions – Buns

Combine water and sugar in a large mixing bowl. Add the yeast and let stand until mixture is frothy and bubbles.

Add milk, oil and salt to the yeast mixture and stir to combine. Add the flour to form a dough. Dough should be soft and slightly tacky.

Place the dough into a lightly oiled bowl and turn dough to coat. Cover with plastic wrap (spray wrap with cooking spray so it doesn’t stick) and let rise in a warm place until doubled (approx 1 – 1 1/2 hours).

Punch down and knead in cubed and grated cheeses and the cubed ham. Divide dough into 16 pieces. Shape into rounds and place on lined baking sheets. Cover with plastic wrap (spray wrap with cooking spray so it doesn’t stick) and let rise in a warm place until doubled (approx 45 minutes).

Instructions – Glaze

Brush rolls with egg and sprinkle with the grated cheese.

Bake in an oven preheated to 375 degrees for 25 minutes until well browned. Remove from baking sheets and let cool on wire racks.
