Sumptuous large chunks of ham with melting bite size pieces of Bocconcini, tender broccoli, and sweet red pepper make a quick hearty mid week meal that everyone will enjoy.

Ingredients

1 cup cubed Schneiders or Maple Leaf Ham
1 cup Bite Size Bocconcini
1 bunch brccoli florets and stems, chopped
1/2 cup flat leaf parsley, chopped
1/2 cup pitted black olives
500 g penne pasta
1/4 cup extra virgin olive oil
1 tbsp salt, plus extra for veggies
3 garlic cloves, slices or chopped
1/2 red pepper, chopped
1/4 cup grated parmesan for garnish

Directions

Bring to a boil a 3/4 full large pot of water to a boil. Add the salt.
Add the pasta, stirring frequently. Cook until al dente ( to the tooth bite) approx. 10 min. After 5 min. of the pasta cooking add the broccoli and cook together with the pasta.
Meanwhile, add oil to a large preheated skillet. Toss in garlic, ham, red pepper, black olives, a pinch of salt and parsley. Saute for 5-8 min.

Drain pasta, leaving a small amount of water in the pot. Add the sautéed ingredients, Bocconcini and parmesan. Toss to mix.
