Sumptuous large chunks of ham with melting bite size pieces of Bocconcini, tender broccoli, and sweet red pepper make a quick hearty mid week meal that everyone will enjoy.
|1 cup||cubed Schneiders or Maple Leaf Ham|
|1 cup||Bite Size Bocconcini|
|1 bunch||brccoli florets and stems, chopped|
|1/2 cup||flat leaf parsley, chopped|
|1/2 cup||pitted black olives|
|500 g||penne pasta|
|1/4 cup||extra virgin olive oil|
|1 tbsp||salt, plus extra for veggies|
|3||garlic cloves, slices or chopped|
|1/2||red pepper, chopped|
|1/4 cup||grated parmesan for garnish|
Bring to a boil a 3/4 full large pot of water to a boil. Add the salt.
Add the pasta, stirring frequently. Cook until al dente ( to the tooth bite) approx. 10 min. After 5 min. of the pasta cooking add the broccoli and cook together with the pasta.
Meanwhile, add oil to a large preheated skillet. Toss in garlic, ham, red pepper, black olives, a pinch of salt and parsley. Saute for 5-8 min.
Drain pasta, leaving a small amount of water in the pot. Add the sautéed ingredients, Bocconcini and parmesan. Toss to mix.
