A lovely, rustic one dish meal that is the perfect way to Break Up With Ground Beef for dinner.
|1 tbsp||(15 mL) Olive oil|
|1 lb||(454 g) Maple Leaf Prime Naturally® Ground Chicken|
|1||(39 g) Package Chili seasoning|
|1||(284 mL) Can Cheddar cheese soup|
|2 cups||(500 mL) Salsa|
|1 cup||(250 mL) Canned black beans, rinsed and drained|
|SWEET POTATO MASH:|
|8 cups||(2 L) Sweet potatoes cut into 1” (2.5 cm) cubes)|
|1/2 cup||(125 mL) Butter|
|Salt and pepper|
COOK sweet potatoes in a large pot of salted water for 12-15 minutes or until fork tender. Drain and add butter. Mash potatoes and mix with a hand held mixer until smooth and fluffy. Season to taste with salt and pepper. Set aside.
PREHEAT oven to 375°F (190°C).
HEAT oil in a large skillet over medium-high. Cook chicken, breaking apart with the back of a wooden spoon for 8-10 minutes. Add onion and cook for 2-3 minutes longer. Sprinkle with seasoning and stir. Add corn, cheese soup, salsa and black beans. Stir to combine and simmer for 2-3 minutes.
ASSEMBLE pie in a 9x13” (3.5 L) baking pan, placing the meat mixture in first. Carefully top with the mashed sweet potatoes. Bake for 30 minutes and serve.
Sprinkle with grated Cheddar cheese before baking if desired.
Substitute Maple Leaf Prime Naturally® Ground Chicken for Turkey.
