Grilled vegetables love goat cheese. That’s why we’ve married them together in this fantastic vegetarian panini. Creamy goat cheese, sweet grilled vegetables and a balsamic drizzle in a crisp panini.
|8||Slices Villaggio® Italian Style Panini Bread|
|3/4 cup||(175 mL) Crumbled goat cheese|
|1||Red onion, sliced, grilled|
|1||Small zucchini, thinly sliced, grilled|
|1||Red pepper, grilled, peeled and seeded|
|1||Yellow pepper, grilled, peeled and seeded|
|20||Spears asparagus, grilled|
|Balsamic glaze, to drizzle|
PREHEAT panini grill to 375˚F (190˚C).
DIVIDE cheese between four slices of bread, top with assorted grilled vegetables, a drizzle of balsamic glaze and remaining bread.
BRUSH olive oil over the outside of each sandwich.
GRILL sandwiches until cheese is melted and outside is golden brown, about 5-6 minutes.
If you don’t have a panini grill, this sandwich can be made in a fry pan.
