Summer is fun grilling, so I grilled this pepper stuffed with Smoked Chicken Sausage mixture, combination of mashed potato, boiled egg, smoked paprika, cayenne pepper, spring onion, celery, cubed chicken sausage and topped with diagonally cut smoked chicken sausage. What a treat!
The filling itself will stand alone and can be use as side dish.

|1 Pkg||Schneiders Chicken Smoked Sausages-JMS Chicken Smoked Sausage SPICY JALAPENO|
|1 tbsp||brown sugar|
|2 tbsp||barbeque sauce of your choice|
|2||large sweet pepper|
|3||medium baking potatoes|
|1/2 tsp||Dijon mustard|
|2||boiled eggs, sliced|
|1 bunch||spring onion|
|2||celery stick, diced|
|1/8 tsp||cayenne pepper|
|1/4 tsp||smoked paprika|
Cut half of the sausage in small cubes and the rest cut diagonally. Put in the pan with 1 tsp brown sugar and barbeque sauce of your choice stirring occasionally, cooked for 7 to 10 minutes until the sauce thickens, separate the diagonally cut sausages in another plate.
Cut the pepper lengthwise into 4 equal parts, I am making an appetizer so this is in small portion; you can adjust size as wide as you like (even half). Remove the white pith and seeds from the inside of the bell pepper and grilled in the barbeque for about 5 minutes. Set aside.
In a small pan, boiled the potato for about 15 minutes on a high heat, drain when cooked and mashed it slightly. Add the mayonnaise, Dijon mustard, cooked Schneiders cube chicken smoked sausage, boiled eggs, spring onion, celery stick and cayenne pepper. Mixed thoroughly, you can adjust the mayonnaise if desired. Season with salt and pepper. Garnish with Schneiders Chicken Smoked Sausages cut diagonally on top and sprinkle with smoked paprika.
