Grilled Mustard and Herb Chicken with Dill and Dijon New Potato Salad

This recipe is not only a tasty new twist for your next BBQ but so easy it is destined to become an instant summer classic!

Ingredients

4 Maple Leaf Prime Naturally® Marinated Dijon Mustard and Herb Chicken Breasts
2 lbs (900g) New Potatoes
1/4 cup White vinegar
3/4 cup Olive Oil
2 tbsp Dijon mustard
1/4 cup Diced green onion
1 tbsp Lemon Zest
2 tbsp Chopped fresh dill
Salt and Pepper To Taste

Directions

BOIL new potatoes in salted water until tender. Cool and cut into quarters. Set aside.

WHISK together vinegar, olive oil and mustard. Add the remaining ingredients and toss with cooled potatoes.

PREHEAT BBQ to medium-high. Lightly coat the grill with non-stick cooking spray. Grill chicken for 8-10 minutes per side or until nicely char-grilled and the internal temperature reaches 165°F (74°F).

SERVE grilled chicken with new potato salad.
