Maple sweetened squash with charred grill marks scented with mint, lime and oregano give this side dish a new twist of flavor and colour. What a great easy and healthy side, perfect for Maple Leaf Prime fully cooked entrées like Turkey with Gravy or Sweet & Sour Pork
1 | acorn squash, washed, sliced into 1 inch rounds, seeded |
1 | lime zested and cut in half |
1 tbsp | tahini paste (sesame paste) |
1 | clove of garlic, peeled and finely chopped |
2 tsp | maple syrup, plus 1 tsp extra for marinade |
1 | tbsp EVOO or sesame oil, plus extra |
3 | sprigs each of mint and oregano, chopped |
salt and pepper to taste |
Brush squash with extra oil lightly.
Place squash directly on BBQ grill on med.low heat.
Cook until fork tender approx. approx. 15-20min depending on heat.
Set aside and allow to cool to the touch.
Place lime on grill cut side down. Grill for 5 min to achieve grill marks. Set aside to cool to touch
Prepare the Dressing:
Place the tahini, zest, garlic, olive oil or sesame oil, extra maple syrup, 1/4 tsp pepper and 1/2 tsp salt in a small ramekin. Squeeze the lime halves into the mixture, stir to blend.
Assembly:
Gently cut the skin of the squash off.
Cube into 1/2"-3/4" pieces.
Drizzle with dressing toss to coat. Can be served warm or room temperature. Readjust seasoning.
