Grilled Lemon Chicken with Red Pepper Ragout

Easy and full of flavour. Juicy lemon chicken smothered in sautéed sweet peppers and onions.

Ingredients

4 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts
½ cup (125 mL) Lemon juice
2 tbsp (30 mL) Olive oil
1 Clove garlic, minced
1 tsp (5 mL) Dijon mustard
2 tbsp (30 mL) White wine
1 tbsp (15 mL) Chopped fresh thyme
Salt and pepper
RAGOUT:
3 Red peppers, sliced
1 Onion, sliced
1 Clove garlic, minced
2 tbsp (30 mL) Capers
1 tbsp (15 mL) Chopped fresh thyme
1/4 cup (60 mL) White wine
1 tbsp (15 mL) White wine vinegar
Salt and pepper

Directions

PLACE chicken breasts in a large re-sealable plastic bag. Combine lemon juice, olive oil, garlic, Dijon, wine, thyme, salt and pepper in a small bowl. Pour marinade over chicken. Seal bag and refrigerate for at least 30 minutes.

PREHEAT barbeque to medium-high. Lightly coat grill with non-stick cooking spray. Remove chicken from marinade and grill for 6-8 minutes per side or until internal temperature reaches 165°F (74°C). RAGOUT: HEAT olive oil in a large skillet over medium heat. Sauté peppers and onions until soft. Add garlic, capers, thyme, wine, vinegar and season with salt and pepper. Allow to cook until liquid is reduced by half.

SPOON ragout over chicken and serve.
