The unique texture of the grilled Halloumi cheese is perfect with fresh heirloom tomatoes, fresh basil and nutty extra virgin olive oil Halloumi Cheese.
|1||(250 g) Package Halloumi cheese|
|1/2 tsp||(2 mL) Chopped fresh oregano|
|3 tbsp||(45 mL) Extra virgin olive oil (good quality)|
|4||Slices Villaggio® Original Thick Sliced Italian Style White Bread, lightly grilled or toasted|
|4||Large heirloom tomatoes (or regular vine tomatoes)|
|Pinch of flaked sea salt (optional)|
|Pinch freshly ground pepper|
PREHEAT BBQ to medium. Lightly coat the grill with non-stick cooking spray.
CUT Halloumi into four ½” (1 cm) slices. Brush the cheese with olive oil and sprinkle with oregano. Place on the heated grill and cook for about 2 minutes per side. Place lemon on the grill, cut side down and grill for about 2 minutes or until lightly char-grilled. Transfer cheese to a plate and drizzle with the juice of the lemon.
ASSEMBLE sandwich by topping two of the slices of bread with grilled Halloumi, tomato slices, and fresh basil leaves. Sprinkle with flaked sea salt and pepper. Drizzle with extra virgin olive oil and top with the second slice of bread.
