Marinara and pasta are easy to make, then add some steamed veggies and grilled chicken for a complete meal.
|2||Maple Leaf Prime's® Fresh Chicken Breasts|
|28 oz||can of crushed tomatoes|
|1||small onion, chopped|
|1||clove garlic, crushed|
|1/4 cup||basil (or cilantro or baby kale)|
|4 cups||penne pasta|
|2 cups||brocolli, chopped|
|2 tsp||olive oil|
Grill and slice chicken.
Marinara sauce: Peel and chop onion. Peel and crush garlic. In a large pan over medium heat saute onions and garlic in oil for about 5 minutes until soft. Add can of crushed tomatoes and basil (or whatever green is abundant in the garden). Do not use regular tomatoes as they have too much liquid.
Steam and chop broccoli.
Cook penne pasta for about 4 cups. Follow package directions.
To serve, spread about 2 cups of pasta with a half cup of sauce. top with broccoli and chicken.
Use crushed tomatoes, not regular.
