This healthy grilled chicken breast is complemented with a simple delicious twist on a classic gremolata.
|4||skinless Maple Leaf Prime chicken breast|
|1 tbsp||lemon zest|
|2 tbsp||lemon juice|
|1 tbsp||orange zest|
|2 tbsp||orange juice|
|1 tbsp||grapefruit zest|
|2 tbsp||grapefruits juice|
|1/2 cup||fresh parsley, chopped|
|1 tbsp||garlic, minced|
|1/2 cup||good quality olive oil|
|Salt and pepper|
Preheat grill to medium high heatSeason chicken breast with salt and pepper.In a bowl mix together remaining ingredients, season with salt and pepper. Adjust gremolata to your taste. Grill chicken breast 4 to 5 minutes per side or until an internal temperature of 165 degrees is reached. Serve by spooning gremolata over each chicken breast. Drizzle with additional olive oil if desired.
Serve with couscous mixed with toasted pisachios and pomegranate seeds.
