|1||Whole wheat bagel, cut in half|
|1||Slice Swiss cheese|
|1||Slice Maple Leaf® Ready Crisp® Bacon|
|1 tsp||(5 mL) Olive oil|
|1||Large egg, lightly beaten|
|1/2 cup||(125 mL) Baby spinach, coarsely chopped|
|Pinch of fresh ground pepper|
TOAST the bagel. Place cheese and bacon on the bottom half of the bagel.
HEAT oil in a small non-stick skillet over medium-high. Add egg, spinach and pepper and cook, stirring occasionally until set, about 1 minute. Place the egg mixture of top of the cheese and bacon and top with the remaining half of bagel.
