1 Whole wheat bagel, cut in half
1 Slice Swiss cheese
1 Slice Maple Leaf® Ready Crisp® Bacon
1 tsp (5 mL) Olive oil
1 Large egg, lightly beaten
1/2 cup (125 mL) Baby spinach, coarsely chopped
Pinch of fresh ground pepper


TOAST the bagel. Place cheese and bacon on the bottom half of the bagel.

HEAT oil in a small non-stick skillet over medium-high. Add egg, spinach and pepper and cook, stirring occasionally until set, about 1 minute. Place the egg mixture of top of the cheese and bacon and top with the remaining half of bagel.
