Try something a bit different around the holidays with this Green Bean and Bacon Toss side.
|2.5 lbs||(1 kg) Green bean, trimmed|
|8||Slices Schneiders® Bacon, chopped|
|1||Small onion, finely chopped|
|3||Cloves garlic, minced|
|Pinch of chili flakes (optional)|
|.5 cup||(125 mL) Hazelnuts, toasted and chopped (optional)|
|1 tbsp||(15 mL) Fresh lemon juice|
|Salt and pepper|
BOIL a large pot of salted water and add beans. Cook for 2-3 minutes or until tender crisp and bright green. Drain and plunge into a bowl of ice water to stop cooking. Drain again and pat dry.
HEAT a large skillet over medium-high. Add bacon and cook for 5-6 minutes or until crisp. Remove bacon from the pan using a slotted spoon. Drain on a paper towel lined plate.
DISCARD all but 2 tbsp (30 mL) of the bacon drippings from the pan. Return to heat; add onions and sauté for 3-5 minutes or until soft and fragrant. Stir in garlic and chili flakes if using. Cook an additional minute before tossing in beans and hazelnuts. Cook stirring for 3-4 minutes or until heated through. Season with salt and pepper, stir in bacon bits and lemon juice. Serve hot
