Greek yogurt replaces the mayonnaise in this healthy version of a sandwich favourite.
4 | slices Dempster’s ® White bread |
2 | hard-cooked eggs |
1/4 cup | (60 mL) plain 2% Greek yogurt |
1/4 tsp | each salt, pepper and dill |
Pinch | paprika |
1/3 cup | (75 mL) diced avocado |
1/3 cup | (75 mL) diced Roma tomato |
1 cup | (250 mL) fresh arugula (loosely packed) |
Mash together eggs, yogurt, salt, pepper, dill and paprika. Fold in avo-cado and tomato.
Spread egg mixture evenly over 2 slices of bread; top with arugula. Top with remaining slices of bread.
