Greek yogurt replaces the mayonnaise in this healthy version of a sandwich favourite.
|4||slices Dempster’s ® White bread|
|1/4 cup||(60 mL) plain 2% Greek yogurt|
|1/4 tsp||each salt, pepper and dill|
|1/3 cup||(75 mL) diced avocado|
|1/3 cup||(75 mL) diced Roma tomato|
|1 cup||(250 mL) fresh arugula (loosely packed)|
Mash together eggs, yogurt, salt, pepper, dill and paprika. Fold in avo-cado and tomato.
Spread egg mixture evenly over 2 slices of bread; top with arugula. Top with remaining slices of bread.
