Delicious Qunioa recipe with mixed vegetables and bacon

Ingredients

6 Strips of Maple Leaf Bacon
225 g Quinoa
1 Red, Orange or Yellow Bell Pepper
½ Red Onion
½ English Cucumber
1 cup Cherry Tomatoes
¼ cup Crumbled Feta Cheese
¼ cup Olive Oil
¼ cup Red Wine Vinegar
1 tsp Garlic Powder
1 tsp Onion Powder
½ tbsp Grainy Dijon Mustard
2 tsp Dried Oregano
5-6 Fresh Basil Leaves
Salt and Pepper

Directions

COOK the quinoa according to the package instructions. Meanwhile fry the bacon, and crumble it when it is crispy

CUT all of the vegetables into small, even pieces.

ADD together the olive oil, vinegar, garlic and onion powders, Dijon mustard and dried oregano. Shake and blend this mixture up, and add salt and pepper as needed

MIX cooked quinoa with the vegetables, bacon and basil. Add the freshly mixed dressing slowly, tasting to ensure flavor is not overwhelmed.
