Fresh lemon and garlic flavours of souvlaki and all the fresh ingredients of a Greek salad on a bun and drizzled with tzatziki.
|3||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into ½” (1 cm) cubes|
|2 tbsp||(30 mL) Greek seasoning|
|4 tbsp||(60 mL) Lemon juice|
|1/4 tsp||(1 mL) Olive oil|
|1 cup||(250 mL) Diced cucumber|
|1 cup||(250 mL) Diced tomato|
|1/3 cup||(80 mL) Diced red onion|
|1/3 cup||(80 mL) Sliced black olives|
|1 cup||(250 mL) Crumbled Feta cheese|
|3 tbsp||(45 mL) Greek style salad dressing|
|4||Villaggio® Italian Style Sausage Buns|
|4 tbsp||(60 mL) Ready prepared tzatziki|
PREHEAT BBQ to medium-high. Lightly coat the grill with non-stick cooking spray.
TOSS chicken cubes with Greek seasoning, lemon juice and olive oil. Thread chicken onto skewers and grill for 15-20 minutes, turning frequently until evenly char-grilled and the internal temperature reaches 165°F (74°C).
MEANWHILE mix together cucumber, tomato, onion, olives, Feta cheese and Greek dressing.
ASSEMBLE by spreading the buns with tzatziki. Remove chicken from skewers and place on the buns. Top with the mixed salad ingredients and serve.
For an interesting presentation, leave the chicken on the skewers inside the bun and remove just before serving.
