You can taste the savoury flavors of the Mediterranean in every bite of this sensational summer salad! Use Olivieri® Three Cheese Rainbow Tortellini for an extra pop of colour.


1 (350 g) Package OLIVIERI® Three Cheese with Rainbow Tortellini
.66 cup (150 mL) Olive oil
.33 cup (75 mL Lemon juice
1 tbsp (15 mL) Oregano
1 Medium cucumber, diced
1 Green pepper, diced
1 Medium red onion, diced
1 cup (250 mL) Cherry tomatoes, halved
1 cup (250 mL) Kalamata olives
.5 cup (125 mL) Feta cheese
Pinch black pepper


COOK tortellini in a large pot of boiling salted water for 6-8 minutes. Drain and rinse with cold water. Meanwhile, mix olive oil, lemon juice and oregano in a large bowl.

ADD remaining ingredients to bowl and combine with cooked pasta.
