This healthy Greek inspired cold pizza is packed with Mediterranean flavors.
|2||Maple Leaf Prime Raised Without Antibiotics Chicken Breasts|
|1||400 gr Longo’s Gourmet prepared pizza crust|
|1 1/2 cup||(350 ml) Longo’s hummus or tzatziki sauce|
|1 cup||(250 ml) romaine lettuce, shredded|
|3/4 cup||(175 ml) kalamata olives, roughly chopped|
|1 cup||(250 ml) cherry tomato, halved|
|1/2 cup||(125 ml) cucumber, diced|
|1 cup||(250 ml) roasted red peppers, sliced|
|1/2 cup||(125 ml) feta cheese, crumbled|
|1 tsp||(5 ml) paprika|
|2 tbsp||(30 ml) Longo’s signature Sicilian Extra Virgin Olive Oil, divided olive oil|
|1/4 tsp||(1.25 ml) oregano, dried|
Preheat oven to 375 degrees
Season chicken breast with 1 tbsp of olive oil, salt and pepper.
Place chicken on a parchment lined baking sheet and cook for 18 to 20 minutes or until internal temperature reaches 165 degrees.
Allow to cool slightly.
In the meantime drizzle remaining tbsp. of olive oil on to pizza base and sprinkle with oregano.
Place on to a baking sheet and bake for about 8 minutes. Using two forks shred chicken apart.
Assemble pizza by spreading pizza base with hummus or tzatziki, arrange shredded chicken on top followed by lettuce, tomato, olives, cucumber and peppers.
Sprinkle cheese over top and sprinkle with paprika.
Makes great next day lunches for kids! Make double the chicken and use left overs by placing all ingredients in a lunch box along with a soft tortilla wrap for an easy and nutritious lunch.
