A delicious greek breakfast pizza in a bun!
|1||Dempster's 100% whole wheat english muffin|
|2 tbsp||feta cheese, crumbled|
|4||baby spinach leaves|
|1 tbsp||sun dried tomatoes, chopped|
|1 tbsp||kalamata olives (pre pitted and sliced)|
|1/2 tsp||oregano (freeze dried, preferably)|
|2 tbsp||shredded mozzarella cheese|
|1 1/2 tbsp||of your favorite pizza sauce|
1. Toast English muffin. Spray inside of a coffee mug with non -stick cooking spray. Break egg into mug and add in feta, sundried tomatoes, oregano and Kalamata olives. Scramble together with fork.
2. Put egg mixture into microwave for 45- 60 seconds (with cover) or until egg is set. Gently loosen by running knife between inside of mug and egg.
3. Add pizza sauce to the inside of the bottom and top half of English muffin. Melt mozzarella cheese on each half in microwave for about 20 seconds, or until melted.
4.Top bottom half with egg, then with baby spinach leaves.
5.Top with other half of English muffin
Serve immediately and enjoy!
