A Mediterranean inspired chicken dish with traditional Greek ingredients and flavors.

|2||Roma tomatoes, roughly chopped|
|¼ cup||(125 mL) Pitted Kalamata olives|
|1||Head garlic, halved crosswise|
|2||Small red onions, cut into wedges|
|2 tsp||(10 mL) Oregano|
|Salt and pepper|
|2 tbsp||(30 mL) Olive oil|
|½ cup||(125 mL) Crumbled Feta cheese|
|2 tsp||(10 mL) Capers|
PREHEAT the oven to 375°F (190°C).
ARRANGE the chicken breasts on a 9x13” (3.5 L) baking dish. Add tomatoes, olives, garlic, and onions. Sprinkle with oregano, salt and pepper. Drizzle with olive oil and bake in the preheated oven for 20 minutes. Sprinkle with Feta cheese and bake for an additional 5-10 minutes or until the internal temperature reaches 165°F (74°C). Serve with warm pita bread and tzatziki.
