Crispy bacon covered in oozing double cheese with a crisp bite of refreshing Granny Smith apples.
|1 cup||cheddar cheese, shredded|
|1 cup||cream cheese|
|1 tsp||dried thyme|
|1||small onion, chopped|
|4||Dempster, Whole Grain bread|
|1||Granny Smith apple|
Fry the bacon in a preheated skillet until crisp. Reserve 1/2 of the fat, and cook the onions and thyme until softened and light golden brown in remaining fat.
Mix the onion mixture with the cheese. Set aside.
Slice the apple thinly removing the seeds.
Spread 1/4 of the filling on each slice of bread.
Top 2 slices of bread with apple slices. Distribute the bacon onto 2 slices of bread. Sandwich the pieces together making 2 sandwiches. Brush the outside of the bread with remaining bacon fat.
Place each sandwich on a grilled pan or a pannino press and brown on the outside.
