A blend of two mixed cheeses, oozing and topped with crispy green Granny Smith Apples, sandwiched between loads of crisp bacon then pressed in a Panino press to make a sinful delicious sandwich.
|6||slices Mapleleaf Bacon|
|1 cup||shredded cheddar cheese|
|1 cup||cream cheese|
|1 tsp||dried thyme|
|1||small onion chopped|
|2 tbsp||canola oil|
|4||slices grain bread|
|1||granny smilth apple|
Fry the bacon until golden and crisp on all sides in a skillet. Remove the bacon from the pan. Reserve the bacon fat.
Using 2 tbsp of bacon fat saute the onions until golden and reduced in size.
Stir the herbs, cooled onions and cheese together.
Spread 1/4 of the cheese on one side of each bread slice.
Slice the apple thinly, removing the seeds and place over 2 slices of bread.
Top with the 2 slices of bread with bacon. Sandwich the breads together.
Brush the outsides of each sandwich with a bit of bacon fat.
Place on pannino press or grill pan and toast on both sides.
