|1||Maple Leaf® Sweet Pickled Pork Cottage Roll (about 4 lbs or 2 kg)|
|3/4 cup||(175 mL) Ketchup|
|3 tbsp||(45 mL) Brown sugar|
|1 tbsp||(15 mL) Prepared yellow mustard|
|2 tbsp||(30 mL) Worcestershire sauce|
|2 tbsp||(30 mL) Lemon juice|
|2 tsp||(10 mL) Chili powder|
SLICE cottage roll in 1” (2.5 cm) steaks. Place in a re-sealable plastic freezer bag.
WHISK together all of the remaining ingredients and pour over the pork. Seal the bag and massage the marinade into the meat to coat. Refrigerate for 4 hours or up to overnight.
PREHEAT BBQ to medium heat. Lightly coat the grill with non-stick cooking spray. Arrange the meat on the grill and brush with additional sauce. Cook for 6-8 minutes per side or until caramelized and crispy on the outside and very tender inside. The internal temperature should reach at least 165°F (74°C).
This could be served on a bun.
