Grab'N Go Hot Corn Chowder & Snack Pack

About this Recipe

As Autumn leaves start to change so do the cool temperatures.
Hot Corn Chowder made with in season fresh corn will keep your children's tummies warm and full.
Adding a quick Grab'N Snack Lunch Mate will make their meal special and your day easier!

Ingredients

1 Pkg Schneider's Grab'N Snack Lunch Mate per child
2 broccoli florets
4 carrot sticks
3 cucumber sticks
1 bunch grapes
2 tbsp EVOO
1/2 carrot peeled finely diced
1/2 celery rib finely diced
1 small onion diced
2 corn on the cob shucked or 2 cups frozen corn
2 cups milk
398 ml can cream style corn
2 tsp salt
2 tbsp flour

Directions

In a medium saucepot add the oil and heat on #6, med. high.
Add the onion, celery and carrot. Cook, stirring occasionally for 3 min.
Add the flour and stir to mix. Cook for 1 min.
Add the milk slowly, stirring quickly to prevent lumps.
Add the fresh corn, can of corn and salt.
Stir and cook on med. heat for 30-35 min until carrots are cooked but have a bit of a crunch.

Assembly:
Add the veggies to a snack bag.
Place soup in a tight spill proof thermos. Don't forget the spoon.
Place grapes in a reusable food safe container.
Pack lunch bag with all the above items adding the Lunch Mate

Notes

I forgot the green and red grapes in my photograph but, a complete meal always has fruit for dessert or snack time.
