This delicious gourmet grilled cheese brings together crispy bacon, pesto, a variety of cheeses, and tomato, all on rye bread.
|2 tbsp||(30 mL) Olive oil|
|1||Clove garlic, minced|
|Salt and pepper to taste|
|2 tsp||(10 mL) Freshly chopped thyme or ½ tsp dried|
|8||Slices Dempster’s® Mild Light Rye Bread|
|2 tbsp||(30 mL) Prepared pesto|
|7 oz||(220 g) Swiss cheese or smoked Mozzarella or Gouda, thinly sliced|
|8||Slices Schneiders® Country Naturals™ Bacon, cooked|
|2||Tomatoes, thinly sliced|
COMBINE olive oil, garlic, salt, pepper and chopped thyme in a small bowl. Set side.
HEAT a large skillet over medium heat.
SPREAD pesto evenly over one side of 4 slices of bread. Top with cheese, bacon, sliced tomato and remaining bread slices.
BRUSH outside of each sandwich with olive oil mixture. Place into preheated pan and cook 2-3 minutes per side or until sandwiches are golden brown. Cut in half and serve immediately.
