Simple side dish with lots of flavour. Creamy and rich, this is a perfect side for beef with red wine sauce. Add bacon on top for a bit of crunch.
|4 cups||sweet potatoes cubed|
|1/2 cup||goat cheese|
|1 tsp||garlic powder|
|1/2 tsp||rosemary dried|
|1 tbsp||sour cream|
|2||slices bacon cooked and crumbled|
|1 tbsp||Parmesan cheese grated|
Boil potatoes until fork tender. Place in a large bowl and mash with butter, sour cream and spices.
Gently stir in dollops of goat cheese.
Top with bacon crumbles and Parmesan cheese and enjoy!
