This easy to make sandwich is a nutritious component of your daily diet.


2 cups (500 mL) Chopped cooked chicken
1 cup (250 mL) Cooked wild rice
.25 cup (60 mL) Dried apricots, chopped
.5 cup (125 mL) Gruyere cheese, grated
1 cup (80 mL) Mayonnaise
1 tbsp (15 mL) White balsamic vinegar
1 tsp (5 mL) Honey
Salt and pepper
8 slices Bon Matin® Gluten Zero™ 100% Wholegrain Bread
Leaf lettuce or pea sprouts


MIX together chicken, wild rice, apricots, cheese, mayonnaise, balsamic vinegar, honey, salt and pepper.

SPREAD the mixture over half of the bread slices, top with leaf lettuce or pea sprouts and the remaining bread. Cut in half and serve.


Tips: Cooked wild rice is available in cans at your local supermarket, simply drain and use for the salad mixture.
Option: Butter bread before assembling sandwich.
