A yummy gluten-free sandwich featuring classic egg salad.
|2||Hard boiled eggs, roughly chopped|
|1||Green onion, finely chopped|
|2 tbsp||(30 mL) Mayonnaise|
|Salt and pepper|
|Dash Worchestershire sauce|
|Dash Hot sauce (optional)|
|1 tsp||(5 mL) Dijon mustard|
|2||Slices Cheddar cheese|
|4||Slices Bon Matin® Gluten Zero™ White Bread or other gluten free bread|
MIX eggs, green onion, mayonnaise, salt, pepper, worchestershire sauce and hot sauce if using. Set aside.
SPREAD mustard evenly over two of the four slices of bread. Arrange two slices of ham over the mustard. Divide the egg mixture evenly between the sandwiches; top with a slice of cheese and the remaining slice of bread. Cut in half and serve.
Serve with pickles or raw vegetable sticks.
