This is my way of turning a boring gluten free tortilla into a new love of food.


2 gluten free tortillas
8 oz chopped cooked chicken
2 tbsp sliced black olives
1 tsp honey mustard
3 oz shredded mozzarella
1 tbsp sesame oil
1 tsp chives


Heat fry pan on medium and add 1 table spoon of sesame oil and then place on brown rice gluten free tortilla in pan add chicken, black olives mozzarella and chives let cheese melt a little or until tortillas if lightly browned. Add your honey mustard and then put the second gluten free tortilla on top, flip whole sandwich over to brown other side. Slide sandwich on to a plate and use pizza cutter and cut in to four wedges. Let cool a little and enjoy.


I just love turning gluten free into fun food. Healthy eating with a fun twist for the food challenged people like me. Try adding chopped cilantro for a fun twist.
