1 Maple Leaf® Corned Beef Brisket
1 tbsp (15 mL) Butter
1 Large onion, chopped
1 Carrot, grated
2 Zucchini, sliced
1/3 Head of cabbage, coarsely chopped
2 tbsp (30 mL) Brown sugar
1 tbsp (15 mL) Mustard
1 tbsp (15 mL) Flour
1/4 tsp (1 mL) Salt
1/2 cup (125 mL) Apple juice
2 tbsp (30 mL) Brown sugar
1 tbsp (15 mL) Mustard
1 tbsp (15 mL) Apple juice


COOK the brisket according to package directions.

MEANWHILE heat butter over medium-high in a large non-stick skillet. Add onion and sauté until soft. Add carrot, zucchini and cabbage. Cook for another 3-4 minutes or until just tender.

COMBINE sugar, mustard, flour, salt, and apple juice. Pour over the vegetables. Cover and cook, stirring occasionally for 20 minutes.

PREHEAT oven to 500°F (260C).

WHEN brisket is cooked, remove from the bag and transfer to a 9x13” (3.5 L) baking dish. Arrange the vegetables around the brisket.

COMBINE all of the ingredients for the glaze and pour over the brisket. Bake in the preheated oven for 5-7 minutes. Remove from the oven and serve with rice or boiled potatoes.
