About this Recipe

This recipe infuses tender and slow cooked Side Ribs with sweet, citrus and optional heat in perfect harmony, it is worth the wait.

Ingredients

1 Rack Maple Leaf Prime® Pork St. Louis Side Ribs
.25 cup (60 mL) Honey
1 Lime, zested and juiced
2 tbsp (10 mL) Minced garlic
2 tsp (10 mL) Minced ginger
2 tsp (10 mL) Soy sauce
2 tbsp (30 mL) Melted butter
.5 tsp (2 mL) Chili flakes (optional)
1 Red chili pepper, thinly sliced (optional)
Salt and pepper

Directions

PREHEAT oven to 325°F (160°C). Remove membrane from the back of the ribs by gently peeling and pulling it off.

CUT ribs into one-bone portions. Place in a shallow baking dish and season with salt and pepper. Add ½ cup (125 mL) of water to the pan, cover with aluminum foil and bake for two hours until very tender.

WHISK together the remaining ingredients in a small bowl.

BBQ METHOD:
PREHEAT BBQ to medium-high. Lightly coat the grill with non-stick cooking spray. Remove ribs from the cooking liquid and place on the grill. Brush ribs liberally with sauce, turning frequently until golden brown and caramelized. Garnish with sliced red chili pepper slices.

BROILER METHOD:
PREHEAT the broiler to medium-high. Arrange the ribs on a baking sheet. Brush liberally with sauce, turning and basting frequently until golden brown and caramelized. Garnish with sliced red chili peppers.
