The ultimate salad! This recipe is protein packed with all of your favourite healthy ingredients and topped with delicious fruit.
|2 tbsp||(30 mL) Olive oil|
|2||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts|
|Salt and pepper|
|1 tsp||(5 mL) Cajun seasoning|
|3 cups||(750 mL) Torn leaf lettuce|
|2 cups||(500 mL) Seedless grapes, halved|
|1 cup||(250 mL) Blueberries|
|1/2 cup||(125 mL) Light Feta cheese, crumbled|
|1/2 cup||(125 mL) Almonds|
PREHEAT oven to 375°F (190°C).
LINE a baking sheet with parchment paper. Rub chicken with olive oil and season with salt and pepper. Bake chicken for 30 minutes or until the internal temperature reaches 165°F (74°C). Remove chicken from the oven and cool. Cut cooled chicken into slices and toss with Cajun spices. Set aside.
PLACE lettuce in the bottom of a bowl. Arrange the remaining ingredients and chicken in sections over the lettuce. Serve with dressing on the side or drizzled over the salad.
Serve with sesame vinaigrette, honey Dijon or make your own dressing.
Make your own dressing:
¼ cup (60 mL) Nutritional yeast flakes
3 tbsp (45 mL) Soy sauce
3 tbsp (45 mL) Apple cider vinegar
3 tbsp (45 mL) Water
1 tbsp (15 mL) Almond butter
1 Clove garlic, minced
¾ cup (175 mL) Olive oil
1 tbsp (15 mL) Honey
¼ tsp (1 mL) Salt
BLEND all of the ingredients using an immersion blender to a smooth consistency.
