This is a wonderfully versatile and delicious salad. Crispy pears, chewy apricots and crunchy toasted cashews tossed with tender bites of chicken breast in a light and creamy dressing.
|2||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cooked and chopped|
|2||Stalks celery, diced|
|2||Ripe pears, cored, diced|
|.25 cup||(60 mL) Chopped dried apricots|
|.5 cup||(125 mL) Chopped roasted, salted cashews, divided|
|.33 cup||(80 mL) Light whipped salad dressing|
|.25 cup||(60 mL) Plain yogurt|
|1 tsp||(5 mL) Lemon juice|
|Salt and pepper|
COMBINE chicken, celery, pears, apricots and 1/3 cup (80 mL) cashews together in a medium bowl.
WHISK together salad dressing, yogurt, lemon juice, salt and pepper. Drizzle over salad and gently toss to combine. Serve garnished with remaining cashews.
