This easy to make Frittata sandwich is packed with wonderful flavours and is a great choice for lunch or brunch.


2 Eggs
1 Green onion, sliced
1 tbsp 1 tbsp (15 mL) Grated Parmigiano Reggiano cheese
4 Basil leaves, coarsely chopped
8 Chives, chopped
1 tbsp 1 tbsp (15 mL) Olive oil
2 slices of Dempster’s® Healthy Way® (boost my protein!) or (Procardio) bread
4 Tomato slices
2 Leafs of iceberg lettuce
8 Cilantro leaves
Salt and black pepper to taste


WHISK together eggs, green onions, Parmigiano Reggiano cheese, basil and chives, season with salt and pepper.

HEAT oil in a small pan over medium heat. Add egg mixture and cook for 3 minutes, flip frittata and continue to cook for an additional 3 minutes,

remove from heat. TOP one slice of bread with tomato, lettuce, cilantro, cooked frittata and remaining bread slice to form sandwich.
