This easy to make Frittata sandwich is packed with wonderful flavours and is a great choice for lunch or brunch.
|1||Green onion, sliced|
|1 tbsp||1 tbsp (15 mL) Grated Parmigiano Reggiano cheese|
|4||Basil leaves, coarsely chopped|
|1 tbsp||1 tbsp (15 mL) Olive oil|
|2||slices of Dempster’s® Healthy Way® (boost my protein!) or (Procardio) bread|
|2||Leafs of iceberg lettuce|
|Salt and black pepper to taste|
WHISK together eggs, green onions, Parmigiano Reggiano cheese, basil and chives, season with salt and pepper.
HEAT oil in a small pan over medium heat. Add egg mixture and cook for 3 minutes, flip frittata and continue to cook for an additional 3 minutes,
remove from heat. TOP one slice of bread with tomato, lettuce, cilantro, cooked frittata and remaining bread slice to form sandwich.
